The modern Caribbean cookbook that brings flavour to any kitchen
It's early, I know this because the birds outside are still singing in the trees, the sun is also low in the sky, nobody else is awake except Mum, downstairs cooking up another weekend stew.
Ginger, garlic, lemon, and roasting chicken poured into every room, the pungent spices slowly flooding in like a cascading waterfall. Strong, hard and fast. It could only mean one thing, it was Caribbean slow cook Sunday.
For me, Original Flava, Caribbean Cookbook was to selfishly recreate smells from my childhood kitchen. Growing up, Mum was always cooking, mostly Caribbean food and smell of her favourite dishes instantly takes me back to comforting memories of her.
Before Mum passed away she made me scribble down how to cook rice and brown chicken stew. But I wanted much more, I wanted fried dumplings, jerk pork and beef patties too.
Well London brothers Shaun and Craig delivered. They first burst onto the culinary scene when they started a Facebook page, sharing one minute videos, showing how easy it is to make Caribbean cuisine. A short while later they had over 70 thousand viewers and that's still growing today.
Their likeable, laidback approach means even a novice to Caribbean food could master their dishes. The test of a good cook book is one that is splashed with sauces, ingredients highlighted and notes written down the side. I look forward to creating my own memories with this book and I also hope Mum is looking down approving of the Caribbean vibe continuing in our household.
